Your Ugali Replacement: Greens and Eggs

When you remove ugali, fill the plate with something. The cheapest keto-friendly base is sukuma wiki and cabbage, cooked in a little oil with onion and tomato. Pile it high, because leafy greens are very low in carbs and you can eat plenty. Add protein you can afford: boiled or fried eggs, omena, tilapia, beef, matumbo or chicken. Some people make cabbage the base where ugali used to sit, then put their stew or greens on top. Avocado is a keto gift when in season, cheap and full of good fat that keeps you satisfied. Coconut, groundnuts and small amounts of oil also help you stay full without bread or rice. The trick is to eat enough fat and protein so you are not left hungry and reaching for a mandazi an hour later. A full plate of greens, eggs and stew beats a small plate of ugali for staying power.
